Biscuits- So easy, so versatile

 


These biscuits are so easy! I got the recipe (slightly modified) from this AMAZING cook over at momontimeout.com. I use the recipe for my middle school home ec class (FACS) and they *almost* always turn out. They're seriously so easy to make!

But that's not even my favorite part about them.

Delicious? You bet. Quick? That's the only kind of food I make.

But that's STILL not why I love this recipe so much!

I kid you not, these biscuits taste equally amazing after being FROZEN!

That's right. Delicious after being frozen. Like, legit just as scrumptious.

So, when I whip up a batch (which literally takes less than 25 minutes from start to eat-a-burning-hot-biscuit-with-butter), I double the recipe and freeze them.

Of course you do! Because nobody has time to cook and nobody wants to eat fast food every weeknight. I know the drill, mamas. Dance and soccer practice, screaming toddlers and needy husbands. (Not bashing, love. You're the greatest. But you have needs. Of course you do! But you know, someone has to fill them.).

So, follow the recipe as usual, but as you're cutting the biscuits out, put them in a single layer in a zip lock bag (no need to flash freeze or anything fancy- just lay them carefully in there and zip it closed) and place them in the freezer.

Now, when you managed to throw dinner in the slow cooker but you need biscuits to go with that luscious beef roast, just spray a cookie sheet with non-stick spray or use parchment paper, lay out your biscuits, and put them in the oven. No need to preheat.

BUT, be sure to cook them at 325 instead of 400 for about 7 minutes, then turn the heat up to 350 and continue cooking until golden. I promise they'll still be so.freaking.amazing.

Now, I said they're versatile. Obviously you can just eat these biscuits as a side dish or with honey or butter or jam or.... man, I really want a biscuit.

However, I also use them to make biscuits and gravy. Who has time to cook a big breakfast in the morning (or who isn't starving when they wake up?). I almost always have cooked sausage in the freezer (I only need half a roll of ground sausage for lasagna, so I cook the whole thing and put the rest in a zip lock in the freezer. Best decision ever. Cooking meat slows us down.). Now I ALSO have frozen biscuits. I put the biscuits in the oven per the direction up above, then I whip up a white country gravy (recipe here or just use the packet, because we all need the packet sometimes) and throw the frozen sausage in the cooked gravy. It will heat right up. Voila! Biscuits and gravy in 20 minutes. And you barely had to do anything!

But that's not all, kids! Oh, no.

How about chicken pot pie? Are you a fan? Do you like spending hours in your kitchen? No? Me neither. So whip up a batch of these biscuits (or take them out of the freezer because haven't I convinced you to freeze these yet?) and follow this recipe for chicken pot pie and biscuits that I got from this other amazing cook at thecozycook.com  . You can find my modified version of the recipe here (because I simplified it a little because, well, I don't like the word lazy, but...), but basically, you pour this biscuits and gravy style over those amazing biscuits.

Bam!

Dinner in 20 minutes.

Not enough versatility?

Fine. You can even eat these leftover! Don't microwave. That really is lazy. Just put the leftover biscuit on a sheet pan and pop it in the oven for 5-8 minutes at 350. Cook up an egg and grab some leftover bacon from the fridge (you cooked extra for breakfast the other day, remember? Instead of one package, you cooked two.  AND you were smart enough to put half of it in the fridge before that needy husband or bacon-thieving daughter ate it all before the waffles were even ready. You need crispy bacon for potato soup and pizza and.... basically what doesn't need bacon? Anyway, now you have a breakfast sandwich (which, by the way, can be eaten any time of day. Don't kick breakfast for dinner, now.).

Try these biscuits. Please? They're so good.

If you don't have a pastry cutter, you can always use 2 knives or a fork if you must. But honestly, do yourself a favor and buy a pastry cutter. It makes pastries more fun. And easier. And I promise I'll give you another excuse to use it.
