Chicken Pot Pie with Biscuits
Do you want an easy weeknight meal? Try this delicious, 30 minute family dinner! It can be made using frozen or premade biscuits and rotisserie chicken, or even that canned chicken in your food storage you've been wondering what to do with!
However, I prefer these biscuits. They're a modified recipe, and the best part is, they're great for freezing! So whenever you whip up a batch, make some extra and put them in the freezer in a zip lock bag before cooking. When you're in a time crunch, put them in a cold oven and turn to 325 degrees. Turn the temp up to about 350 7-8 minutes in, and they'll be ready just in time for the gravy/chicken sauce you're about to make!
Dinner in 30 minutes! (And it's even sorta healthy)
This sauce is so easy. It uses a roux, and it's technically called a veloute sauce (because it's made with chicken broth) but it also uses half and half, which makes it especially creamy.
Tips:
Only add the broth is splashes (translation- no more than 1/4 cup). If you add it all, the mixture will separate and have a hard time thickening.
Mire Poix- you can buy frozen packages of this at the store, OR, anytime you have a recipe that calls for carrots or celery or onions, chop up some extra and freeze it. Then you'll have your veggies ready to go! Side note- celery should be blanched. Read about that process here. (the original recipe I modified uses frozen peas- feel free to add whatever veggies you like! My family doesn't touch peas, so I took them out completely). You don't even have to thaw the veggies. Just pour the frozen bag of veggies into the butter and saute 6-8 minutes, until tender.
I don't buy chicken broth. It's just another item I have to keep stocked at my house. Instead, I buy chicken bouillon in a large jar. Then I just add a tsp per cup of hot water. You can boil it first, but if you're going to add it to a cooking dish, I just add the water and sprinkle in the bouillon like it's another seasoning. Bonus: I only have to remember to buy it like, once a year, or even every other year. Brain space opened.
You can use canned chicken or rotisserie chicken, or you can even microwave defrost frozen chicken and bake it in a greased glass pan for 30 ish minutes. Drizzle some oil and garlic salt on top and voila. Chicken without the fuss. Then you just chop it when it's finished. It's added at the end of the recipe, so you have time to bake it if you need to!
Don't have garlic? Or don't feel like mincing? I buy pre-minced garlic, but in a pinch, I use Lawry's garlic salt with parsley. Seriously the best seasoning ever. Want your food to taste good without much effort? Buy it. Costco has it in large containers. Yeah. That's how great it is. It'll change your life. I swear.
Also, if you don't want to eat this over biscuits, It's great as a soup-ish dish- eat it plain or dip some bread in it. Or, spoon it over potatoes. Sort of like a goulash. My husband would definitely prefer it that way. He's a meat and potatoes kind of guy.
Lastly, it's great leftover. Just microwave in a bowl and heat up a biscuit for 20 seconds. I've eaten it 3 days in a row. Still great every time.
