Loaded Potato Soup- a crowd favorite

 Nothing says comfort food like potato soup.

As in, you don't really want to eat it when you're going to workout, because you'll probably be sick like Michael Scott with his Alfredo. Because it's creamy like that. And packed with carbs. Good for surviving the winter. Or children.

Children DO in fact like this recipe!

I am somewhat limited in what I can cook. I accidentally raised picky eaters, and, on any given day, 2 out of 5 of my children will refuse to touch dinner. They just want cereal and dino nuggets. Oh wait, 2 of them hate dino nuggets now. Mac and cheese from the box is better. Except for the other 3. They hate mac and cheese. Now. It was their favorite. Now they want potatoes covered in ketchup. Vomit.

BUT, all 5 children will eat this soup. The other night, my 3 year old wouldn't touch it. I finally bribed him to try a bite. He looks up at me with his half smile and says, "That's actually good." Then shoves his face full of soup.

Of course it's good, boy! It's filled with cheese and bacon and potatoes and milk (ya, not even cream! So it's sort of healthy, too, and not very pricey!). It makes those last few potatoes go a long way. And it even reheats well! (like for real- I hate leftovers. But this potato soup is delish reheated. Sometimes I add a little water if it gets too thick in the fridge.)

I ALWAYS, ALWAYS make dinner rolls with this meal, but you can totally buy some if you prefer! Or use crackers or whatever you like. Back in the day, my mom would have given us a piece of plain white bread and put the country crock spread on the table to add some pizzazz. And honestly.... my kids would love that. But I'm a grown up and I like rolls. Don't have time? I bet you actually do! I first found the recipe for potato soup here. However, I modified it to fit my taste preferences (translation: I added more of the good stuff and took away some of the unnecessary stuff and thinned it out). See the recipe below!

The recipe is for 3-4 servings because I teach FACS (home ec). This is a lab size portion. Basically, the recipe I have at home is double this, and I usually double that so we have leftovers. I know, I know- I hate leftovers. But not these ones! It doesn't taste leftover. Promise.
